Many of us in the high performance building world like to imagine what the world around us might look like when we reach the sustainability “finish line”, so to speak. In many ways, the ambitious owners of RE Farm Café, Duke and Monica Gastiger, are living it. Located in central Pennsylvania, just outside State College, this farm to table restaurant is located right next to their main food source and housed within a complex built to Living Building Challenge standards.

Through a combination of design and changing routines, RE Farm seeks to be the model for future establishments to learn from, setting an example for sustainable building methods, regenerative farming practices, and food science. In this video you get a sense for some of the changes the made to the kitchen to meet the rigorous needs of a commercial net-energy-positive operation aimed at Living Building Challenge goals. This included opting for all induction cooking elements and nixing the ice machine all together.

To complete the envelope and drawdown the energy use of the restaurant, the design / build team at Envinity utilized Alpen high performance windows and the complete Pro Clima airtightness and vapor control systems, including SOLITEX MENTO 1000, TESCON VANA tape, INTELLO PLUS smart vapor retarder, EXTOSEAL ENCORS sill flashing tape and more.
